Blackberry & Thyme Dressing

Sweet blackberry, subtle acidity and aromatic thyme come together in this deeply coloured dressing that transforms even the simplest plate.
Drizzle over peppery leaves, spoon onto roasted squash, or use to lift a warm lentil salad. It’s bold, balanced and beautifully seasonal.
Ingredients
- 2 tbsp Norfolk Cordial Blackberry
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp wholegrain mustard
- 1 tsp fresh thyme leaves
- 4 tbsp extra virgin olive oil
- Pinch sea salt
- Freshly cracked black pepper
Method
- In a small bowl, whisk together the blackberry cordial, vinegar and mustards.
- Stir in the thyme leaves.
- Slowly whisk in the olive oil until emulsified.
- Season with salt and black pepper to taste.
Let sit for 5–10 minutes before serving to allow the flavours to soften and marry.
Serving Suggestions
- With goat’s cheese and toasted walnuts
- Over roasted beetroot and rocket
- Tossed through warm puy lentils
- As a glaze for grilled halloumi
